Cream of Potato Soup

Ingredients
  

  •  
  • 2 Tablespoons plus 2 teaspoons butter
  • 4 Tablespoon all-purpose flour
  • 1 small onion - chopped
  • 4 cups milk
  • 2 cups diced cooked potatoes
  • Salt and pepper to taste

Instructions
 

  • Melt butter in heavy saucepan over low heat.
  • Add flour and stir until smooth.
  • Add onions (may have to add a small amount of the milk at this point).
  • Cook one minute stirring constantly.
  • Gradually add milk.
  • Cook over medium heat, stirring, until thick and bubbly.
  • Stir in potatoes, salt and pepper.
  • Cook for 5 minutes or until ingredients are thoroughly heated.
