Rice and Squash Bake
Ingredients

 - 1 lb. Ground beef
 - 1 medium onion chopped
 - 1/2 bell pepper chopped
 - 2 cups yellow squash chopped
 - 1 cup uncooked rice
 - 1 tsp. Salt
 - 1 can cream of mushroom soup
 - 2 cups water
 - 1 cup grated cheese optional
 
Instructions
- Brown beef, onion and pepper. Add squash and 1 cup water. Simmer for 15
 - minutes. Add rice, salt, soup and the other cup of water. Place in covered dish
 - and bake at 350 degrees for 50-60 - minutes. Add cheese and return to oven for
 - about 10 minutes (until cheese melts).
